Chapter One

Last Friday we had lunch at Chapter One in Dublin, we were greeted warmly by co-owner Martin Corbett. While we were having a glass of champagne in the bar area it was clear that we would have the “Lunch Tasting Menu” @ 45€ for five courses. The wine was chosen for us by the Sommelier Ed, and he did not let us down.

We started with a lightly smoked potato soup with cep which was fantastic, it was served with a glass of Puerto Fino Sherry, which was a nice surprise. This was followed by a parfait of Ardsallagh goats cheese, served with Sauvignon St-Bris which is from Burgundy.

The fish dish was Irish caught blue fin tuna carpaccio served with organic beetroot & pickled vegetables, it was awesome, we had a glass of dry Silvaner with this. Roasted rump & slow cooked neck of Connemara lamb followed, it melted in your mouth & with this we had good Cabernet Sauvignon from South Africa.

We were then invited to have our pudding at the “Chefs Table” it was fruit salad with chilled fermented plum consommé & matcha green tea sponge served with crème fraiche ice cream & lemon curd, the Riesling from the Clare Valley was outstanding.

Ross Lewis the co-owner chef came over for a chat. (Not the person in the photo below, which is the other co-owner Martin Corbett) To sum it all up: This was a great find, it is a Restaurant that takes pride in its service and uses when it can great local & seasonal produce.
