Roast Chicken

The first cook book that found its way to my book shelf was “Roast Chicken & Other Stories” By Simon Hopkinson & Lindsey Bareham, I was introduced to Lindsey Bareham by Jeremy Lee at the Savoy Hotel in London in the late 90’s, along with Simon Hopkinson she is a great cook book author, from memory we drunk a few Martinis together. The roast chicken you see here I cooked in an old Swiss wood burning oven simply with olives, tomatoes, potatoes, lemon & parsley. (Click on a photo to start slideshow)
